The cooler slopes of  the Constantia mountain range, along with cold fermentation and other techniques, unite to produce this stunning Sauvignon Blanc from Eagle’s Nest.  Tropical fruit aromas of passionfruit and guava lead the way to bright acidity on the palate with gooseberry and grapefruit notes that are rounded out by a smooth, elegant mouth-feel.  Staff Favorite:  The perfect way to celebrate summer -pair with local Virginia seafood, shellfish and/or fresh-water fish.  Our Staff pick for this month: Rappannock Oysters three ways:  Raw on-the-shell with fresh lemon and a dab of minced shallot in red wine vinegar; Broiled Oysters Rockefeller with spinach, butter, lemon, bread crumbs and parmesan; Fried Oysters with spicy Old Bay Aioli dipping sauce.
